Split Pea (Veggie)

Ingredients
4 C Peas4 Golden Beets4 C carrots1 Large onion1 T Garlic Chopped1 Box Knorr vegetable soup mix4 C celery3 Leeks
Directions
Add peas to a large (really lage) pot.

Add 12 cups of water
Bring to a boil, turn down to simmer

Add all ingredients except half of the leeks. Make sure all the ingredients are chopped and clean.
Simmer ingredients together for several hours, until soup is think and most vegetables are unseen to the eye. You can either puree some of it to liquify it more, or keep it the same texture. An hour befor eaten add the remaining leeks, for color and texture. It makes about 10, 2 cup servings. Enjoy!
