Introduction

Number of Servings: 4

Ingredients

    1 tbsp balsamic vinegar
    3 tbsp olive oil
    1 tsp Dijon mustard
    2 tsp agave syrup
    salt and fresh ground pepper to taste
    1 cup fresh baby spinach
    1 cup sliced strawberries
    1/3 cup slivered almonds, lightly toasted

Directions

Makes 4 generous servings

Combine the first 5 ingredients in a salad bowl. Add the spinach, strawberries and almonds and toss to coat well. Divide the salad into four equal salad bowls and serve.

Note. To toast the almonds, place them in a single layer in a small baking pan. Bake in a 300 degree oven for 10 minutes, or until lightly toasted.

    This is so incredibly delicious. My husband even loved it (a miracle since he is a picky eater). I did double the amount of spinach; there certainly was enough dressing to cover everything. Totally awesome and simple recipe!!! - 6/1/09

    i have had this before, how simple and yummy! I am making this very salad for my sisters housewarming/nephews birthday on Sunday! I just know it will be a huge hit, plus I am going to put in some madarine oranges. - 5/25/10
