Crockpot Beef Stew

1 lb. Eye of Round Steak cut in cubes2oz Dry Red Wine2T Extra Virgin Olive Oil2c Beef Stock1c Water3 lg. Russet Potates cut in cubes1 lg Onion sliced3 clvs Garlic minced15 med Baby Carrots10 oz pkg Frozen Corn10 oz pkg Frozen Peas
1. Turn Crockpot on high. Combine Beef Stock, Water, Potatoes, Carrots, Onion, and Garlic and put on the lid.
2. Trim meat of all fat. Heat Extra Virgin Olive OIl in skillet over med-high heat. Brown Steak on all sides (about 5 mins).
3. Add Red Wine to skillet, scraping bottom of the skillet. Bring to a boil, and turn down to simmer for 2 mins.
4. Add Meat and Wine mixture to Crockpot.
5. In the last 45 mins pour both Peas and Corn into crockpot.
Makes 8 servings.
