2 Cups Ouaker Oat Bran Muffins1/4 cup packed Splenda brown sugar blend2 teaspoons baking powder1/2 teaspoon salt (optional) I used about this much 1 cup non fat dry powder milk mixed with 1 1/2 cup waterEgg Beaters Substitute for 2 eggs1/4 cup of splenda 2 tablespoons unsweetened applesauce
Preheat oven to 425' F Mix dry ingredients thoroughly. Line one dozen medium muffin cups with paper baking cups or spray bottomes with non stick cooking spray. Add combined milk, egg beaters, applesauce and splenda: mix until just moistened. Fill prepared muffin cups 3/4 full. Bake 15-17 minutes or until golden brown. Variations: Mix into batter, 1/4 cup walnuts, and or 1/2 cup raisins, Or mix into batter 1/2 cup fresh or frozen blueberries or 1/2 cup mashed, ripe banana. 121 Calories per muffin. I made some mini muffins which would be about 60 cal a piece. Various spices can also be added such as cinnamon.
