Cheesy Chicken Casserole (Campbell's)

Ingredients
6 to 8 skinless. boneless chicken breasts2 cans 98% fat free cream of chicken soup1 & 1/2 cups rice2 soup cans of water4 cups frozen mixed vegetablesonion powder to tasteblack pepper to taste1 8oz bag 2% shredded cheddar
Directions
Preheat oven to 375. Mix rice with soup and water in a 9x13 dish. Add vegetables and seasoning. Lay chicken on top and cover dish with foil. Place in oven for 1 hour or until chicken is done. Remove foil and sprinkle cheese on. Place back in oven until all cheese is melted or brown. Remove and let sit for 10 minutes. Enjoy!

    always a favorite in my home! I vary the recipe with different veges and black beans and instead of the rice I use quinoa. It adds a great flavor and cooks the same way as rice. - 5/9/09
