Simple Summer Gazpacho

Ingredients
12 tomatoes, chopped3 cloves garlic, minced1/4 cup chopped onion1 large cucumber, chopped1 large yellow bell pepper, chopped1 Tbsp. capers1 cup chopped carrots1/3 cup of salsa (optional)Water to taste
Directions
Toss all of the ingredients together in a large bowl. Take 1/4 of the mixture and pulse, with water, in a blender until smooth. Add back to the mixture.

You can serve immediately or chill. The longer it chills, the more the flavors marinade.
