12 Sea Scallops (or 16 - 20 Shrimp)2 Tablespoons Extra Virgen Olive Oil4 TBS grated fresh ginger7 minced garlic clovesSea Salt to taste16 fl oz dry white wine4 Tbs sliced fresh basil1 cup Basmati Rice
In sauce pan heat oil until hot, but not smoking. Add garlic and 3 tbs of grated ginger. Cook over moderately high heat until the garlic turns golden, 2 to 3 minutes. Pour wine into pan and bring to a simmer. Cook until reduced to 8 fl. oz. About 8 minutes. Add the scallops in a single layer. Be careful not to overcook. Serve the scallops and their juices served over the cooked rice. Sprinkle with remaining ginger and basil.
