1 large sweet potato1 can black beans6 corn tortilla's1 cup enchilada sauce1 tsp cumin1 tsp chili powder1 tsp onion powder1 tsp garlic powder
Bake and mash sweet potato. Slightly mash beans, and add spices. Layer ingredients in a loaf pan. Starting and ending with enchilda sauce. Making three layers of tortilla. Bake at 425F for 20 minutes.
