Ingredients
1 C Bulgur, dry 1 C Water 1 C Parsley, coarsely chopped12 Mint Leaves coarsely choppedCucumber (peeled), 1 large (8-1/4" long) 1/2 med Onion, chopped 3 oz Lemon Juice4 tbsp Olive Oildash Salt,1/8 tsp Pepper, black (to taste)6 Cherry Tomatoes, Fresh, coarsely chopped
Directions
Soak dry bulgur in boiling water 30 mins, squeeze out any excess water
combine all ingredients in a large bowl and toss.
serve chilled.

    Thanks, Doug! MY FAVORITE salad!! I always add lots of garlic and I have found that sticking the bulgur/water mixture in the fridge makes it bulk up faster with less excess water.(Make sure it is air tight) Thank you so much for posting this... such a healthy choice...
