Date-nut logs

Ingredients
1.5 cups dates, soaked for 20 minutes1 cup pecans or almonds, or walnuts1 cup coconut1 tsp cinnamon1/2 tsp vanilla
Directions
Soak dates for 20 minutes in enough water to cover. Drain. In food processor, process nuts until fine. Add coconut and briefly pulse until mixed. Add cinnamon and vanilla. Add dates a few at a time, processing until well mixed. knead. Roll into finger-shaped logs. Roll in additional coconut. Refrigerate.
