Grilled Chicken Thighs with Roasted Grape Tomatoes

Ingredients
1 T grated lemon rind2 T. Fresh lemon Juice1 t. olive oil2 garlic cloves, minced8 skinless boneless chicken thighs1/2 t. salt1/2 t. black pepperCooking Spray2 cups grape tomatoes2 T. chopped fresh parsley1 t. grated lemon rind1 T fresh lemon juice1 T. capers1/8 t. salt1/8 t. pepper
Directions
Prepare grill
To prepare chicken, combine first 4 ingredients in a large plastic bag. Add chicken to bag; seal. Marinate in refrigerator 15 minutes, turning bag occasionally. Remove from bag, discard marinade. Sprinkle chicken evenly with 1/2 t. salt and 1/4 t. pepper. Place Chicken on grill rack coated with cooking spray; grill 5 minutes on each side or until done.
Preheat oven to 425. To prepare tomatoes, combine tomatoes and 2 t oil in a 8-inch square baking dish. Bake at 425 for 18 minutes ior until tomatoes are tender. Combine tomato mixture, parsley and remaining ingredients, stirring gently. Serve with Chicken. Yield 4 servings, 2 chicken thighs and 1/4 c. sauce
