Spinach & Pepper Frittata (South Beach)

6 Eggs3 cups Spinach1 cup Onion, chopped1/4 cup Red Bell Pepper, chopped1/4 cup Yellow Bell Pepper, chopped2 TB Garlic Powder (or to taste)1/4 cup Feta Cheese2 TB Olive Oil
Preheat oven to Broil.
Beat eggs together with 2 TB of water. Add Feta Cheese to mixture.
Heat oil in a non-stick pan, and saute onion & peppers until soft. Add spinach to mixture and cook until any moisture from the spinach is gone.
Combine together with egg mixture. Add a little more oil to the pan if it looks too dry, and bring it to medium heat. Pour the egg mixture into the pan and cook for 3 minutes.
Place the pan under the broiler with broil-high settings for 3 minutes to set the top side of the frittata. Personally, I like to transfer the frittata into a pie pan at this stage. But either way works.
Cut into wedges and serve warm.
