Curried Quinoa Salad with Grilled Shrimp

Ingredients
7 oz. frozen uncooked shrimp, thawed and peeled1 tsp. olive oil¾ cup water½ cup quinoa¼ tsp. curry powder1 tbsp. dried cranberries1 cup chopped cucumber2 scallions, chopped
Directions
Toss shrimp with oil and grill for 6 to 8 min. Bring water to a boil, add quinoa, cover and simmer for 15 min. Stir in curry, cranberries, cucumbers and scallions. Top with shrimp.
