Pumpkin pie pancakes

Ingredients
4 oz canned pumpkin1 2/3 cup pancake mix1 cup organic vanilla soymilk1 tbsp pumpkin pie spice4 oz water
Directions
Mix canned pumpkin, pancake mix, soy milk and pumpkin pie spice

Add water as desired into above mixture (depending on how thick or thin you like your pancakes; more water will lead to thinner pancakes)

Drop by tablespoon onto non-stick skillet (using a non-stick skillet eliminates the need for butter or oil); skillet should be over medium-low heat

Use tablespoon to "spread" pancake mixture in pan.

Flip pancake after about a minute or two

makes 5 4.5 inch pancakes
