Israeli Couscous

Ingredients
1c Israeli Couscous1 can chickpeas (15oz)2t olive oil1 carrot chopped or grated1 bell pepper chopped1 bunch scallions, chopped1 or 2 cloves garlic, pressed2 diced zucchini2 small diced tomatoes1t salt1/2t cayenne1/2t cinnamon2T fresh chopped parsley2t cumin powder1T curry powder
Directions
Add carrot, bell pepper, zucchini, tomatoes, garlic & scallions to olive oil in a large skillet, sautee 5 minutes or until desired consistency.

boil 1c water in a saucepan. remove from heat and add couscous and all remaining ingredients. cover & let sit for 5 minutes or until couscous is tender.

Mix all ingredients and enjoy! Makes about 12 one cup servings, tasty hot or cold.
