Mini Veggie Frittatas w/ Egg Beaters

1 1/4 C. Egg Beaters2 T. 2% Milk1/2 C. onions, chopped1 small yellow squash, chopped1/4 C. mushrooms, chopped1/4 Colby Jack Cheese, grated
Mix egg beaters and milk in a bowl. Add cheese and chopped vegetables. Season with salt and pepper. Spoon mixture into muffin tins coated with cooking spray. Bake at 350 degrees for about 15 minutes or until "set" and golden on top.
Serve warm.
