Lentil Rice Pilaf

Ingredients
Lentils, 1/4 cupWhite rice, long grain, 1/2 cup Olive oil, 2 tsp 1/2 tsp cuminVegetable broth, 1 cup Garlic, 1 clove, mincedParsley, 2 tb 2 tb walnuts, toasted
Directions
Boil lentils in a small saucepan for 10 minutes. Drain. In the saucepan, heat oil over medium heat and add garlic, cumin, then lentils and rice. Add vegetable broth and bring to a boil; reduce heat and simmer 17 minutes. Add parsley and toasted walnuts and serve.
Makes 2 1/2 cups
