Lentil Soup (Lenten)

Ingredients
* Onion, 1/2 large * Garlic, 3 cloves * Celery, 2-3 stalks * Baby Carrots, 10 medium * Water, 5 cups * *V8 spicy hot, 1 oz (optional) * Lentils, 3 cups, cooked * Cooked Brown Rice, 3/4 cup (optional) * Canola Oil, 1 tbsp * Salt, 1/2 tsp (to taste) * black Pepper, 1/8 tsp (to taste)
Directions
Add oil, salt and pepper to a hot soup pan;
add onion, garlic, celery and carrots;
Saute until tender.
Add liquid and bring to a boil for a few minutes;
Add lentils and rice; return to a boil
