Mango Chicken

Extra Virgin Olive Oil Spray2 cloves garlic, crushed1 tablespoon ginger, peeled and grated4 teaspoons curry spice (mild, med, or hot)1 cinnamon stick4 curry leaves1 fresh chilli, seeded, finely chopped1 tablespoon brown mustard seeds2 cups pureed mango pulp (5 medium mangoes or 2 large mangoes) 2 cups vegetable stockJuice of 1 lemon2.2 lb (1Kg) chicken breast, skinned, boned, cut in strips
Heat lightly oiled saucepan over high heat. Saute garlic, fresh ginger, curry spice, cinnamon, curry leaves, chilli, and brown mustard seeds until fragrant (about 2 minutes).
Reduce to medium heat and add mango puree, stock, lemon juice. Mix well, and add chicken. Bring to a simmer, then cook, covered, 25 minutes until tender.
If your mango puree is quite juicy, during the last ten minutes of cooking, uncover to evaporate some of the liquid.
Serve with chopped cilantro, over rice (calories for rice not included). Goes great with roasted zucchini and other squash.
