3 cups water3/4 t. salt1 1/2 cups raw bulgur wheat1/2 cup cooked white beans2 tomatoes, chopped3 T. extra virgin olive oilpepper to taste1 garlic clove, minced2 T. chopped chives2 t. chopped fresh mint leavesjuice of at least 2 lemons1/4-1/2 cup chopped parsley
Bring water to a boil with salt. Add bulgur and return to boil. Remove from heat, cover pot tightly, and set aside for 15 minutes. Chop everything while waiting. Drain off any excess water and chill the grain. Toss thoroughly with all ingredients, adding more salt and/or lemon if desired.
Makes 6 1/2 cups, 6 generous servings.
