Chocolate Granola with Toasted Walnuts & Cherries

3 c. Whole Rolled Oats3 T. Ground Flaxseed Meal6 T. Protein Powder (2 scoops/servings)3 T. Unsweetened Cocoa Powder1/2 t. salt1 1/2 c. Chopped Walnuts2/3 c. Pure Maple Syrup2 T. Canola Oil1 T. Pure Vanilla Extract1/4 c. Water2/3 c. Sweetened Dried Cherries, coarsly chopped
Preheat oven to 250 F.
In a large mixing bowl, stir together oats, flaxseed meal, protein powder, cocoa powder and salt, until well combined.
In a heavy, dry skillet, lightly toast walnuts on medium to low heat, stirring regularly, for 7-10 minutes. Do not leave unattended—they will burn easily! You will smell a light, nutty aroma when they are done—remove from skillet immediately.
In a small mixing bowl, stir together 1/3 c. of the maple syrup (set the other 1/3 c. aside), canola oil, vanilla extract and water. Pour the liquid mixture over the dry ingredients and stir together until all ingredients are well combined. Spread evenly onto a lightly oiled/sprayed baking sheet or 9x13 cake pan.
Bake for 1 hour, 15 minutes, stirring every 15-20 minutes for even baking. Remove from the oven and immediately add the chopped dried cherries and remaining maple syrup, stirring well to distribute. Allow to cool and stir once more before storing in an airtight container. Enjoy!
