Simple Potato Pancakes

4 medium, peeled potatoes1 egg white2 tbsp self-raising flour1/2 small onionOil for pan fryingSalt and pepper
1. Grate the potatoes into a big bowl. Remove excess moisture by taking handfulls of it and squeezing it over the sink. Grate the onion into the potato.
2. Add the egg white, pepper, flour, a generous amount of salt to the potatoes. Stir well. Heat oil in non-stick pan (oil not included in nutritional info, as everyone uses different amounts).
3. Drop big tablespoonfulls of mixture into the oil, and flatten slightly. Cook for 4-5 minutes on each side, until golden.
4. Place on paper towels to remove excess oil, and serve.
Makes about 10 pancakes.
