Fruited Bombay Rice Salad

1c. white basmati rice1/2 c. golden raisins1/2 c. chopped celery2 Tbsp sliced green onions1 small diced Granny Smith apple1/4 c. toasted almonds1 orange, zested1/2 c. canola oil2 Tbsp orange juice (use zested orange)2 Tbsp lemon juice1 tsp salt1 tsp curry
Cook rice according to package instructions without butter or salt. Cool. In a large bowl, combine rice (about 3 cups), raisins, celery, green onion, Granny Smith apple, and almonds. Grate zest from orange and add it to the rice. For dressing, combine all remaining ingredients and mix well. Pour over salad and toss. Can be prepared the day ahead - just cover and refrigerate.
