Spinach & Mushroom Manicotti

Ingredients
1 box manicotti2 T olive oil6 oz can mushrooms1 clove garlic1 box frozen chopped spinach, thawed, drained2 eggs1 container (16 oz) lowfat cottage cheese2 T basil2 cups pasta sauce
Directions
Cook manicotti for 7 minutes, drain. Heat olive oil in large skillet, saute mushrooms and garlic for 7 minutes. Press water out of spinach, add to mushrooms and cook for 5 more minutes. Set aside to cool. Lightly beat eggs in large bowl. Add cheese, basil, salt and pepper to taste. Add spinach mixture and stir until well blended. Stuff shells and lay in 13 x 9 baking pan (sprayed). top with pasta sauce. Bake at 350 for 30 minutes covered with foil. Uncover and bake for additional 10 minutes.
