Barley Salad

Ingredients
1 cup uncooked barley1 3/4 fat free chicken broth1/4 cup red onion chopped1/4 cup red pepper chopped1 cup corn1 cup black beansjuice of 1 limesaltpepper
Directions
Toast barley in sautee pan coated with cooking spray. Add chicken broth, simmer till barley is cooked. Cool. Add red onion, red pepper, corn, black beans, and juice of one lime. Salt and pepper to taste.
