Pork and Mashed Potato Casserole

Ingredients
1 lb bulk Italian Sausage or Ground pork3 C mashed potatoesonion and green pepper (OPTIONAL - not computed in nutritional info)2 garlic cloves, minced2 C sliced fresh mushrooms2 C chopped freshed tomatoes1 2 oz Can sliced ripe olives (OPTIONAL - not computed in nutritional info)1 tsp basilsalt and pepper1/4 C Parmesan Cheese, grated2 tsp dried parsley
Directions
Makes 4 - 6 servings
Heat oven to 350*
1. Prepare mashed potatoes
2. In large skillet, cook sausage until no longer pink; drain
3. Place in greased 9 in baking dish
4. Top with prepared mashed potatoes
5. In same skillet, saute onions, green peppers and garlic in oild for 5 minutues or until crisp tender
6. Stir in mushrooms, tomatoes, olives, basil, salt and pepper
7. Spoon over potatoes to within 1 inch of edge of dish
8. Sprinkle with Parmesan cheese and parsley
9. Bake uncovered at *350 for 30 -35 minutes or until top is lightly brown
