Penne with Spinach & Chicken

Ingredients
2 tbs olive oil1/2 onion, thinly sliced1-1/2 tbs chopped garlic2 tbs lemon juice2 chicken breast halves, cubed (or turkey breasts)2 10z pkg spinach leaves12z penne, prepared 1/2 cup roasted red peppers, sliced1/2 cup chicken broth
Directions
Heat oil on med-high heat. Add onion, garlic and lemon juice. Saute until onion softens. Sprinkle chicken with salt and pepper. Add to skillet and saute until just cooked through. Add spinach and toss until it begins to wilt. Mix in prepared pasta. Mix in red peppers. Add chicken broth. Toss. Season to taste.
