Fast Track Blueberry Muffins (adapted from Beachbody)

Ingredients
1 1/2 cups whole wheat flour3/4 cup flax seed meal1 cup brown sugar1 tp baking powder2 tps baking soda1/4 tp salt2 tps cinnamon2 tps pumpkin pie spice1/4 tp ground cloves1 tp ground ginger2 apples, grated3/4 cup 1% milk1 large egg2 egg whites1 tp vanilla extract1/2 cup fresh or frozen blueberries
Directions
Preheat oven to 350 deg, Mix all dry ingredients together. In a separate bowl, combine liquid ingredients and beat for 30 seconds. Pour liquid ingredients into dry ingredients, stir to mix. Fold in blueberries.
Spray muffin pans with non-stick spray. Fill each muffin cup 3/4 full and bake at 350 deg for 35 - 40 minutes.

    Super moist even though there is no oil. Coat the blueberries in a little flour before you fold them in and they won't sink to the bottom. - 3/19/14
