Frozen Cheesecake Tarts

Ingredients
1 pkg Low-Fat Cream Cheese, softened1 Cup 1% Milk1.5 Cups Cool Whip Free, Thawed1 pkg Jell-O Vanilla Instant Pudding16 Reduced-Fat Nilla Wafers, coarsely broken1 Cup Sliced Fresh Strawberries
Directions
Beat cream cheese in a large bowl with a hand mixer until creamy. Gradually beat in milk. Add dry pudding mix; beat two minutes. Stir in Cool Whip, wafers and berries.
Spoon filling into muffin pan with muffin liners. Freeze 4 hours. Remove liners.

    Very tasty and easy to make. I keep leftovers in a freezer bag. I've served this twice for people and they loved it. The reduced fat Nilla wafers don't get soggy, btw. I also dusted the tops with a little cocoa- super pretty. - 6/4/09

    i am going to get lemon pudding, and use crumbled dark choc. wafers as a light dusting at the bottom of the muffin paper cup. i dont want any kind of cookie thing that will taste soggy i guess i am saying. IF the graham crackers or fat free nilla wafers dont get soggy as a crust, please advise! - 6/3/09
