Red Beans (for Red Beans and Rice)

Ingredients
1 lb red kidney beans, uncooked1 lb kielbasa.5 lb ham (Hormel Cure 81)16 cups water2.5 cups celery, chopped2 med. onions, chopped2 green peppers, chopped5 bay leaves1.5 tsp white pepper2 tsp thyme1.5 tsp garlic powder1.5 tsp oregano.75 tsp red pepper.5 tsp black pepper.75 tsp Tobasco
Directions
1. Soak the beans overnight.

2. Place all ingredients except meat and beans in 10 cups of water. Bring to a boil, then reduce heat and simmer for 1 hour.

3. Drain the beans. Add them plus four additional cups of water to the soup mixture. Simmer until beans are tender -- about 2 hours.

4. Add sausage, ham, and remaining 2 cups of water, and simmer about 45 minutes.

Makes 14 cups. Serving size = 1 cup.

Serve over brown rice. Calorie count does not include rice.

    Wonderful, I am going to make it meatless next time to cut down on the sodium and leave out the celery and change the green peppers to red peppers and add them in the last 5 minutes of cooking to avoid mush. - 8/31/10

    Made this last night and don't think it worked out. Incredibly watery. I had pictured something saucy. Several hours of simmering turned the celery and peppers into mush. The main complaint was that it was bland and didn't taste like anything. Maybe just not our style, but we're not making it again. - 3/6/09
