2 cups all purpose flour1/2 cup splenda1 teaspoon baking power1/2 teaspoon baking soda1/2 teaspoon salt1/8 teaspoon ground nutmeg1/4 cup butter1-1/4 cups lowfat buttermilk1/4 cup egg substitute1 cup blueberries
Preheat oven to 400 degrees.
Spoon flour and next 5 ingredients into a medium bowl. Cut in butter with a pastry cutter until mixture is crumbly.
combine buttermilk and egg. Stir well with a whisk. Add to flour mixture, stir until just moist. Gently fold in blueberries.
Spoon batter into 12 muffin cups coated with cooking spray. Bake at 400 degrees for 20 minutes or until muffins spring back when lightly touched.
