black bean salad

Ingredients
2 cans black beans2 cups defrosted frozen corn1/2 cup chopped red onion1/4 cup chopped scallions1/2 jalapeno pepper seeded and finely chopped1 cup cherry tomatoes quartered2 tbsp. freshly chopped cilantro1 lemon juiced1 tbsp. olive oil1/2 cup chopped green bell peppers2 tsp. tabasco saucesalt and pepper to taste
Directions
Place all ingredients into a bowl and stir.Add more hot sauce if you like it hot.I like to add chopped boneless skinless chicken breast in the summer for a quick cold salad on a hot day!Also great for a potluck or BBQ.

    I used lime instead of lemon, and chili powder since I didn't have jalapeno, and it was delicious. I also used fresh corn, which I think made a lot of difference, using half of it raw and half I sauteed in a pinch of olive oil with some chopped garlic. - 9/9/07
