Tofu and Spinach salad

2 tbsps soy sauce1/3 c. rice vinegar2 tbsps ginger1 tbsp sugar1/4 tsp dry mustard1/4 tsp salt1/4 c veg oil1/3 c. cornmeal1 tbsp toasted sesame seeds10 oz bag spinachcherry tomatoesred onion, thinly sliced1 block tofu drained and sliced into 8 1/2" slices
Combine rice vinegar, ginger, sugar, mustard, salt in blender or food processor. Blend and slowly add oil while blending. Can refrigerate dressing.
Marinate tofu with soy for about 15 minutes. Drain tofu. Combine cornmeal and seeds - coat tofu slices with cornmeal mixture. Heat a little oil or spray pan with cooking spray and heat pan. Cook tofu until browned, turning once. Remove from pan and carefully cut tofu into cubes.
Put spinach, tomatoes, red onion and other veggies into salad bowl. Toss with dressing and place tofu cubes on top. Serve immediately.
