Homemade Buffalo Jerky

1 lb. buffalo flank steak1/4 cup Worcestershire sauce1/4 low sodium soy sauce1.5 tsp. natural honey or agave nectarA few shakes of onion powderA few shakes of garlic powderA few shakes of chili powderA few grinds of black pepper
Freeze a 1 to 1.5 lb. buffalo flank steak until it is hard enough to be sliced into 1/4 inch thick slices. Slice across the grain.
Place strips of meat into a sealable plastic bag with soy sauce, worcestershire sauce, chili powder, onion powder, garlic powder, pepper, and honey. Marinate 3-6 hours.
Remove strips from the marinade and pat dry with paper towels before laying out on food dehydrator racks. Place racks in dehydration unit and dry at 160 degrees F for 6-12 hours.
Allow the jerky to cool on paper towels (this absorbs any excess fat/moisture) and then store in a glass mason jar.
