Spicy Shrimp and Noodles

Ingredients
1 1/2 cups cooked rice noodles1 stalk celery sliced1/2 cup green peppers slivered3 mushrooms cleaned and sliced1/4 lb cooked frozen shrimp, thawedThai chili sauce, canola oil, sesame oil, tempura sauce, fish sauceFor garnish:1/3 cup jullienned cucumbers 1 green onion cut in thin slices2 tbsps crushed peanuts
Directions
Add 1 tbsp of oil to a hot pan. stir fry green peppers and onions and mushrooms and a tbsp of chopped garlic for 2 mins. Add shrimp and stir fry for 3 minutes more. Add sauce ingredients:
2 tbsp thai sweet chili sauce
1 tbsp light soy or tempura sauce
1/2 tbsp fish sauce and a few drops of sesame oil. Continue to stir fry until sauce is hot and bubbling. Chop noodles a bit to make eating easier. Toss into sauce and mix well.

Serves 2 people. Top each dish with fresh garnishes. Yummy.
