Breakfast Quiche

Ingredients
8 eggs3/4 c skim milk1/2 c canned spinach, drained1-7oz can mushrooms, drained1/4 c mozzarella cheese
Directions
Combine all ingredients except cheese in a medium mixing bowl. Mix thoroughly. Pour in 16 muffin tins. Bake at 375 for 25 minutes. Sprinkle cheese on top and bake for another 5 minutes. Can be reheated later for a quick breakfast on the run.
