4 large hard cooked eggs, chopped7 oz. extra firm tofu (1/2 package)2 Tbs. Light Mayo2 tsp. mustard1/4 c. white beans, ie baby lima, great northern or navy beans (cooked and pureed)Salt and pepper to taste
Simmer tofu in water for 2 minutes, drain and chop into small oieces. Add mayo, mustard and pureed lima (or other white beans) and chopped eggs and mix together.
Makes 3 sandwiches
Serve on whole wheat bread or over lettuce
