Fiesta Chicken Soup

Ingredients
3 lbs. cooked chicken breast, no skin4 c. chicken broth2 small or 1 large can of diced tomatoes2 small cans of Rotel mild diced tomatoes1 can of sweet corn, drained2 c. of sliced mushrooms1 tbsp. cumin1 tsp. smoked paprikasalt to taste
Directions
Combine all ingredients into a large pot. Cook on medium heat for 30 minutes. Serve hot with 1/4 c. of cheddar cheese & 1 oz. corn tortilla chips (optional). Serves 6-8.
