Caprese Egg White Omelet

Ingredients
8 fresh large basil leaves1/2 c. fresh roma tomatoes, chopped1/4 c. fat-free shredded mozzarella2 egg whites, beaten with a tbsp. water1/2 tsp. minced garlic1 tsp. vegetable or chicken stock1 tsp. aged balsamic vinegarSalt & pepper to taste
Directions
In a small, nonstick frying pan, lightly sautee' garlic, tomatoes and basil in 1 tsp. of stock (to substitute for oil). Add beaten egg whites and sprinkle mozzarella on top. When egg begins to bubble, flip it over. Add salt and pepper to taste. Plate and drizzle aged balsamic vinegar on top. Serves 1.
