nutty fruit muffins

Ingredients
1 1/4 whole grain pastry flour1 1/2 teaspoons baking powder1 1/2 teaspoon ground cinnamon1/2 teaspoon baking soda1/4 teaspoon salt1 teaspoon fat-free vanilla yogurt1/2 cup brown sugar1 egg2 tablespoons canola oil1 teaspoon vanilla extract1 1/2 cups walnuts, chopped1/2 cup crushed pineapple in juice, drained1/3 currants or raisins1/4 cup grated carrots1 1/2
Directions
1. preheat the oven to 400 F

2. In a large bowl, combine first five ingredients. In a medium bowl, combine the yogurt, brown sugar, egg, oil, and vanilla extract. Stir the yogurt mixture into the flour mixture just until blended. (lumps are ok) Fold in the walnuts, pineapple, currants or raisins, and carrots.

3. Divide the batter e enly among 12 muffin cups coated with nonstick cooking spray.

4. Bake for 20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.

5. Cool in pan on a wire rack for 5 minutes. Remove muffins from the pan to cool completely on the wire rack.
