Lepouse's Chicken Curry

Ingredients
1 pound of raw boneless skinless chicken breast1 large onion, thinly sliced1 can of diced tomatoes (I used the one from Del Monte with peppers and onions for extra spice)1 tsp ginger, minced (I used ginger paste)1 tsp garlic, minced1 TB tomato paste1/4 tsp salt4 tsp curry powder4 tsp cumin powder1 tsp canola oil3/4 cup half and half or evaporated milk
Directions
1. In a medium skillet over medium heat, cook onions in oil until browned. Add ginger & garlic and cook 1 minute.
2. Add curry & cumin powders and cook for 1 minute. Add diced tomatoes and cook until reduced and well combined, approx 5-7 minutes.
3. Add chicken, tomato paste and salt and cook until chicken is no longer pink.
4. Add half and half, stir, and simmer until chicken is cooked through.
