Angel Hair with Sun-Dried Tomatoes and Shiitake Mushrooms

Ingredients
1 jar (6 1/2 oz) marinated artichoke hearts1/2 cup olive oil4 cloves garlic, minced2 cups sliced fresh shiitake or regular mushrooms1/4 cup chopped oil packed sun-dried tomatoes1/2 cup chopped fresh parsley1/2 teaspoon salt1/4 teaspoon ground black pepper1 pkg (1 lb) Angel Hair Pasta, uncooked1/4 cup grated Parmesan cheese
Directions
Drain artichokes, reserving liquid. Chop. In large skillet over medium heat, add oil and reserved artichoke liquid. Add garlic, mushrooms and tomatoes; cook 3 minutes, stirring occasionally, until thoroughly heated. Meanwhile, cook pasta according to package directions. Toss hot pasta thoroughly with cheese and sauce. Serve immediately.

    I tried this recipe and didn't find it "horrible" like the previous comment. I didn't use all of the olive oil...I only used 2 TB. It did seem like something was missing, so next time I'll add chicken or maybe some white wine. Very filling and satisfying. - 1/10/10
