Orzo with Chicken, Spinach and Artichokes

56 g uncooked orzo4 oz cooked shredded chicken1 pkg sliced mushrooms1 small jar marinated, quartered artichoke hearts, chopped85 g fresh baby spinach, chopped2 tbsp chopped onion2 tsp minced garlic4 Tbsp light Asian Vinaigrette, Wishbone4 Campari tomatoes, chopped
Measure and cook orzo according to pkg instructions. Drain and set aside in a large bowl.
In a large nonstick skillet, coated with cooking spray, add chopped onions and minced garlic and saute until onion is slightly tender. Add mushrooms, spinach, artichoke hearts and shredded chicken. Saute until spinach is wilted. Add to orzo and toss. Add Asian vinaigrette and toss. Divide into 4 equal servings (approx. 1 cup each). Top with chopped campari tomatoes and serve.
