Vegan Burger

Ingredients
1 c TVP2 c vegan bread crumbs1 c old fashioned oats1 can drained black beans1/4 c onions1/4 c green pepper1/4 c tomato1/4 c carrots1 pack Trader Joes vegan broth1.5 tbsp flax meal
Directions
Combine TVP and vegetable broth in a pot, cook until TVP is sufficiently soaked with the broth.

In a food processor, combine onions, tomatoes, carrots and green pepper. Drain black beans and add them as well. Mix until well blended, but not liquidy.

In a large bowl combine blended veggies, TVP, and oats.

In a small bowl or cup mix 1.5 tablespoons flax meal with 2 tablespoons water. Blend well. This is what is going to bind the burger together.

Add the flax meal/water combination to the rest of the ingredients.

Now add the breadcrumbs. Note: the measurement for the bread crumbs is approximate, I added 1 cup initially and then the rest gradually until a good patty making consistency is reached. You may need more than 2 cups. Also, for this burger to remain vegan make sure your crumbs are vegan!


My mixture made about 9 rather large patties. I also cooked them in a variety of ways. Another note: I found that coating them lightly in bread crumbs helped them keep form.

1) You can bake them and they turn out quite tasty, without the fat of frying them. Baking time is probably about 15 minutes, but keep an eye on them. My oven is a little fast.

2) Put a little olive oil in a frying pan and fry until warm all the way through.

3) I'm sure a George Foreman grill would work nicely for these as well.

4) I had one as leftovers and heated in the microwave. Still delicious!!


For a creamy vegan finish, I topped mine off with a slice of avocado, some onion and mustard. Tasty!!!
