Kevin's Taco Salad

Ingredients
Half a medium onion, approx. half cup. 6cups Iceberg Lettuce1/2 cup of shredded Cheddar cheese1/2 cup Kidney Beans10 Cherry Tomatoes Halved Sauteed (raw if desired, I just don't like raw tomatoes)1/2 LB Lean Ground Beef12 Tbsp Ken's Low Cal Russian DressingSalt & Pepper to taste Crushed Tortilla chips optional, recipe calculated with out them.
Directions
Cook beef with some salt and pepper and till cooked. Drain and rinse beef with hot water to remove all excess grease. Use same pan to cook tomatoes if desired once they are halved. Drain and rinse kidney beans. Finley dice onion. Cut Lettuce into about 1/2 inch squares. Combine all remaining ingredients and toss to coat. Always good with Ice tea on a hot summer day. Also good as a side dish when you half the portion and serve with fajitas or enchiladas. Enjoy
