Greek Lemon Chicken

6 Tbsp lemon juice2 Tbsp + 2 tsp olive oil4 cloves garlic, minced2 Tbsp dried oregano2 tsp dried mint (optional)1 tsp salt1 tsp black pepper2 lb boneless, skinless chicken breast4 cups thickly sliced onions
1. Combine everything except chicken and onions in a shallow bowl.
2. Add the chicken & onions & toss to coat.
3. Cover & marinate in the fridge at least 4 hours, or overnight.
4. Preheat oven to 450 & fire up the grill*. Place chicken, onions, and marinade in 13x9 pan, cover with foil and bake for 10 minutes.
5. Place onions on the grill sealed in a foil packet. Grill chicken directly on the grill, turning 2-3 times, basting with remaining.
*To broil instead of grilling: After initial baking, place chicken and onions on a broiler rack and broil 4-5 inches from heat until chicken is cooked through and onions are golden, 10-15 minutes.
Serving: one four oz breast plus 1/2 cup onions.

I have made this a few times and it is awesome. Everyone that I have made it for, including my in-laws, loves it and wants the recipe. My in-laws always make heavy, fatty foods that I don't particularly like so I was really pleased when my father in-law wanted the recipe...of course I didn't tell hu - 7/31/09
