Sweet and sour sauce

Ingredients
1 and 1/2 tablespoons (45ml) cornflour/cornstarch3 tablespoons fresh orange juice3 tablespoons sherry (or substitute some other fortified wine)5 tablespoons water3 tablespoons wine vinegar3 tablespoons soy sauce3 tablespoons tomato puree1 inch piece of grated root ginger1 garlic clove, grated2 tablespoons dark soft brown sugar
Directions
Blend the cornflour (cornstarch) with the orange juice until smooth. Add all the remaining ingredients and stir well over a low heat until thickened and syrupy.
