Black Beans & Rice with Beef

Ingredients
cooked white rice 2 cups1/2 lb 97% lean ground bean1 can bush black beans1/2 can sweet yellow corn1 can rotel tomateos w/green chilies1/3 cup diced sweet onion5 strips green peppers1 tsp chili powder1/2 tsp curry powder1/2 tsp black pepper1/2 tsp ground cumin1/2 tsp garlic powder1/2 tsp allspice
Directions
Brown ground beef and drain, add chopped onions and chopped green peppers and saute for 3-5 minutes. Drain and rinse black beans and corn and add to meat. Add one can of Rotel tomatoes and 2 cups of cooked rice. Add last 6 ingredients and cook for additional 10 minutes on low heat. Stir frequently. Green peppers should be cooked but slightly crunchy.

Makes 6 -1 cup servings.
Garnish with 1 oz of low fat cheddar cheese for satisfying lunch or dinner.
