Jenn's Basic Crepe

Ingredients

1 1/4 c. fat free milk3/4 c egg substitute3/4 tsp vanilla1 c all-purpose flour1 tsp sugar1/4 tsp saltPlus whatever inside ingredient you want to use like banana and honey or strawberries and jam or cottage cheese....
Combine the first 3 ingredients (milk mixture). In a separate bowl, combine the remaining ingredients (flour mix). Then add the flour mix to the milk mixture and stir well. Refrigerate for 1 hour.
Coat a 7 or 8 in nonstick skillet with cooking spray. Heat over medium heat. Pour abour 2 tbl of batter into the center of the skillet, lift pan and tilt to coat bottom evenly (crepes should be thin). Cook until top appears dry, turn and cook 15-20 seconds longer.
Then fill crepe with whatever fruit or other ingredients you would like and roll up.
