Hearty Sausage and Rice Skillet

Ingredients
1 lb sausage1 can mushrooms (8 oz)2 stalks celery coarsely chopped1 large red pepper, coarsely chopped1 large onion, coarsely chopped1 tsp thyme1/2 tsp marjoram1 3/4 cup chicken broth1 can Cream of Mushroom Soup1 box (6oz) white & wild rice blend1 cup shredded Cheddar Cheese
Directions
Cook the sausage in an oven safe skillet until well browned

Add the mushrooms, celery, pepper, onion, thyme, marjoram, and seasoning packet from rice blend and cook until vegetables are tender-crisp. Stir in broth, soup, rice blend, and 1/2 cup cheese

Bake at 375 for 1hr or until hot and bubbly and the rice is tender. Uncover and stir. Sprinkle with remaining cheese.

    I use tomato rather than the red pepper (and no onion) and it works great too. - 2/11/09
